How delicious does this look?
I have been eating this simple, quick and easy lunch at least once weekly. I take canned Salmon, add salt, pepper, and a little bit of Olive Oil Mayonnaise and mix. Cook up some Quinoa on the stove, microwave some frozen peas, and mix. The entire process takes about 20 minutes and is much healthier than the typical American lunch fair. This meal gives my body the protein it needs to repair itself after running.
Remember that what you eat fuels your body on your runs. If you fuel your body with minimally processed, good for you foods, it will perform better. Fuel your body with junk and do not expect it to do you any favors when it comes to training or racing.

    Yum, looks good! I like mixing veggies with brown rice, seasoning, and broth and baking for about 45 minutes.

    I love quinoa as a good alternative grain. It's higher in protein and the only grain that is a complete protein. Kids still prefer their bread but I can at least get them to eat a little each time.

    I have just started cooking with Quinoa….a few months ago. THe only thing I have done so far is stir frys. But this looks great and super easy (which I need, because I am an awful cook) what is olive oil mayonaise though?

  6. Yay! Sixteen miles….doesn’t it feel great when you go such a distance and feel wfonerdul after! I am glad that you had such a great run…just think, just a few more miles and you ran a marathon:)I hope that you have a wfonerdul weekend Heidi!!
